A simple and tasty snack from the God?s own country. It is a regular in most households, be it North or South Kerala. Pazham pori tastes best hot off the pan and with a cup of tea , that?s like heaven. We hope you guys will enjoy making this simple and easy snack.....
Ingredients
Ripe plantain/ Nendra pazham 2 nos
Roasted rice flour ½ cup
Maida/All-purpose flour 3-4 TBSP
Cardamom powder 1/8 tsp
Cumin seeds 1/8 tsp, crushed
Sugar 3 TBSP, depending on the sweetness of plantain
Turmeric powder ¼ tsp
Salt a pinch
Water ¾ -1 cup
Oil for deep frying
Preparation:
In a mixing bowl, add the rice flour, all-purpose flour, turmeric powder, sugar, cumin seeds, cardamom powder and salt. Mix well and add water to get a smooth batter without lumps.
Peel off the skin from plantains and cut into half. Slice each half into thin slices (one should be able to slice each half into 5 slices).
Heat oil in a frying pan at medium high. When the oil is hot enough, dip each slice of the plantain in the batter and slide into hot oil. Turn the plantains 3-4 times so as to get even cooking and when the edges starts to brown, strain the plantains from oil and drain onto a paper towel. Repeat until you fry all the plantains. Serve hot with tea or coffee?
